The Bracali Restaurant is in the small hamlet of Ghirlanda in the municipality of Massa Marittima. Its menu proposes an innovative cuisine that delves into tradition and local products but reinterprets them in harmonious and contrasting combinations of consistencies and flavours.
Managed by two young brothers, Francesco and Luca Bracali, the restaurant boasts one Michelin Star.
The setting is elegant and refined with excellent attention to detail Even dining room accessories such as the ham tray, the cheese trolley, the breadboards and chopping boards and the bottle holders are all custom-made by a master craftsman from Pistoia.
The varied menu proposes unusual combinations, such as Seared tuna with sweetbreads, sweet-and-sour onions and olives, salmon lasagnetta, lampredotto (a type of tripe) and buffalo milk mozzarella, or Bresse chicken prepared in two different ways with celeriac cream and roast potatoes.
The dessert menu includes Schiacciata fiorentina (a sweet flatbread) with rhubarb sauce and ice cream.
The wine list has an impressive choice of labels from all over Italy, with a particular penchant for regional wines, as well as French champagnes and wines from South and Central America, France, Spain, California, Australia and South Africa.
