Nestled within the city walls of St Paul de Vence is the restaurant Le Tilleul, where Chef Stéphane Marie and his kitchen serve a very refined cuisine that reinterprets the classic dishes of Provencal tradition with new creative flair.
In addition to the inner dining rooms, Le Tilleul has a magnificent terrace in the shade of the secular linden tree that has inspired the name of the restaurant.
Some of the dishes prepared here that are worthy of note are the Scallops au gratin with herbs, the Velvet cream of pumpkin with chestnuts and fois gras, the Veal tenderloin with vegetables and truffle sauce , and exotic influences as well, such as the Red tuna sashimi with mixed salad, ginger, and wasabi, or the Thai soup with chicken, shrimps, ginger, and fresh coriander.
