During past years the Chef Laurent Paccini decided to travel all over the world for professional and cultural purposes, in order to discover a personal way to enjoyment and taste.
Laurent Paccini was born in Aix en Provence in 1976 to a family of Italian origin.
He began his working life with Chef Jean-Marc Banzo at “Clos de la Violette” in Aix en Provence and then moved to Villa Gallici in the same city.
His brilliant career took him to work in several of the best restaurants in France: in Paris under the direction of Jean Louis Nomicos at “La Grande Cascade”, in Lyon he worked with Phillipe Jousse at Mr Alain Chapel’s historic establishment of French gastronomy and then in Monte Carlo at Alain Ducasse’s “Louise XV” where he assisted Chef Franck Cerutti.
Following a spell in France Laurent returned to his Italian roots taking a position at “La Villa Fiordaliso” on the Gardone Riviera with the Chef Ricardo Camanini.
Loving to travel, Laurent likes to feed his curiosity and develop his skills by trying the food of different cultures in the places he visits.
