Tuna Sashimi, White Sesame, Strawberries, Black Garlic, Oysterleaf

Ingredients for 2 people:

200 g tuna
2 g yuzu
1 g black garlic
50 g strawberries
2 g sesame
2 oyster leaves
Agar agar q.s.
Gelespessa q.s.

Method for 1 person:

Cut the tuna into a cube of about 100 g.Cut a strawberry into 1 mm-thick slices, place them on a baking tray with parchment paper and let them dry at 40°. Blend some strawberries and sieve them with a Chinois.  Clean, blend and sieve the black garlic. Boil some water with agar-agar and gelespessa and add the yuzu. Once cold, blend it and bring it to desired consistency. Wash the oyster leaves and dry them. Cut the tuna into 1 cm-thick slices, take the strawberry chips; place the yuzu jelly in a pastry bag.


With the help of a teaspoon splash the plate with the blended strawberries, make small dots with the yuzu sauce and the black garlic, place the tuna on the empty spaces and put the strawberry chips, the oyster leaves and the sesame. Sprinkle some strawberry powder obtained by blending the remaining strawberry chips.
