March 10, 2022 [Venice] – Our successful partnership with Chef Claudio Sadler continues. After winning the coveted Michelin Star at “Gusto by Sadler” at Baglioni Resort Sardinia, he arrives in Venice to design the menu at Baglioni Hotel Luna in Venice, a renovated setting, just a stone’s throw away from Piazza San Marco.
Chef Sadler’s culinary philosophy has led to an ongoing quest for harmony, simplicity, lightness, and sustainability in his dishes. For Baglioni Hotel Luna, he has worked with Resident Chef Gennaro Balice to design a new menu for “Canova Restaurant by Sadler”.
A Blend of Italian Tradition and Modern Innovation
The cuisine at Canova Restaurant features a sophisticated balance between tradition and innovation, with a delicate fidelity between the origins of regional Italian cuisine and brilliant reinterpretations.
Among his signature dishes are: Mullet Gratin with Caponatina; Sweet Potato and Venetian Broth; and Fresh Butter Pasta and Fermented Sage, with Baby Squid and Hazelnut Flavoring.
Canova Bistrot & Canova Bar
To complement the updated gastronomic offerings at Baglioni Hotel Luna, guests can also dine at the Canova Bistrot, where they can taste classic Italian regional dishes in a more informal environment.
Finally, the Canova Bar — which has been restyled to feature a large counter, tables with burnished brass inserts, and armchairs covered with classic Rubelli fabrics — is the ideal location for sipping a great coffee or indulging in an aperitif before dinner.
