Brunello Restaurant with its charming terrace perfectly fuses contemporary décor with tradition. Inspired by the Milanese trattorias of the 1950s, the restaurant offers guests the opportunity to sample nuanced reworkings of Mediterranean cuisine in a truly luxurious setting. Meet our Chefs

Alberto Rossetti, Executive Chef, believes in the unique value of Italian regional cuisine: he has brought the traditions of his hometown to all corners of the world. Raffaele Lauriola, Resident Chef, has had the honour of cooking for movie stars, like Sophia Loren and Meryl Streep, as well as sporting heroes such as Pelé and Schumacher.
He has been developing his passion for cooking since the late ‘80s. After his experience in luxury hotels, he worked in the finest restaurants in Parma, becoming one of Italy’s most famous chefs.
In 2003, his work at the restaurant Tramezzo di Parma was awarded a Michelin star, which it still holds. In April 2013, he took part in the first and second Masters in CUCINA EVOLUTION in Fabriano (Masters in Art Join Nutrition), based on an anti-aging diet designed to prevent cellular aging.
Participation and partnerships: he collaborates with the Consorzio del Prosciutto di Parma, the Consorzio del Parmigiano Reggiano and ParmaAlimentare, bringing the cultural traditions from his hometown around the world, from Tokyo to Boston-New York, by way of Vienna, Copenhagen, Zurich, Lyon, Brussels and Paris. You may recognise him from cooking shows on local networks, as he has appeared on SKY FRANCE, SKY TV UK and TOKYO TV.

 

RESIDENT CHEF RAFFAELE LAURIOLA

He finished his training with a flourish in the late ’70s, then going on to devote his passion to the restaurant industry within luxury hotels in Italy and abroad. He boasts over 16 years of experience in Monte Carlo, in the Principality of Monaco, during which he continued to perfect his art.

His cooking has been enjoyed by world-famous celebrities, such as Sophia Loren, Meryl Streep, Prince Albert, footballers including Baggio, Maldini, Baresi and Pelé, and Formula 1 drivers Schumacher and Vettel.
