The new offering is a paragon of sophistication on the international gastronomic scene, with gourmet dishes that reinvent the Italian culinary tradition. Adding a dash of innovation and panache to the regional cuisine, the Chef leads his guests on a journey of unique flavours and great sensations.

From the bar to the exclusive Sadler restaurant via the exquisite bistrot for lunch, there’s a generous variety of creations to delight our guests, all in an intimate setting laced with the elegance of classic Venetian style.

THE CANOVA RESTAURANT BY SADLER

Sublime à la carte gourmet dishes to arouse the eye and whet the palate. The Canova Restaurant, located in the heart of Venice, one of the world’s favourite Italian art cities, serves a fresh new gourmet cuisine dreamed up by Michelin-starred chef Claudio Sadler with resident chef Gennaro Balice, for a healthy, sophisticated, sustainable menu.The offering is a refined harmony of tradition and innovation, a perfect blend of flavours and aromas, authenticity and sustainability. Among the chef’s collaborators, Jana Sasikova, restaurant manager, Maurizio Severgnini, head sommelier.
Open evenings only, from 7.30 pm to 10.30 pm, from Tuesday to Sunday.

THE CANOVA BISTROT

The Canova Bistrot serves traditional Italian classics in an attractive, informal space. From pasta e fasoi (pasta and bean soup) to spaghetti al pomodoro, the menu offers a selection of the best regional dishes. It’s the ideal place for a quick light bite.
Open daily from 12.00 pm to 3.00 pm and Monday evenings from 07.30 pm to 10.30 pm.

THE CANOVA BAR

Whether for an excellent espresso or a pre-dinner aperitivo treat, the Canova Bar has what it takes to delight. With the spacious bar, the tables inlaid with burnished brass and the armchairs sumptuously upholstered in classic Rubelli fabrics, the freshly restyled Canova Bar creates an elegant, intimate mood.
Every day at 19.02, it’s time for our exclusive Italian aperitivo by Cantine Ferrari, Italy’s favourite bubbly. Guests can also enjoy a wide array of cocktails from the traditional to the experimental created by our head bartender, Raffaelle Tedesco, with a selection of tasty nibbling snacks.
